In response to the shifting needs of our brewer customers, the varieties of bitter and aromatic hops that we grow changes from year to year. Here are some of our more popular offerings and some of the delicious beers they contribute to.
Cascade is an aroma hop with a medium aroma, providing a unique floral and spicy character. It is one of the top two most popular hops in the U.S. craft brewing industry, sharing the honor with Citra hops.
Citra was released in 2007 and has quickly gown in popularity to be tied with the classic Cascade. This aroma hop imparts a distinctive citrus character to beer, with tropical tones of grapefruit, melon, lime, gooseberry, passion fruit and lychee.
Crystal is a versatile variety that is used in Pilsners and Lagers, as well as in ESB’s and Ales. Crystal hops are delicious in Deschutes’ Hop Trip and Ninkasi’s Total Crystallization.
HBC 630 is an unreleased variety from the Hop Breeding Company, a joint venture between John I. Haas and Yakima Chief Ranches. The complex cones smell of sweet raspberry candy.
Released by Jackson Hop Farms in Idaho, this cone packs a punch with sweet pineapple notes mixed with other berry, bubblegum, and citrus aromas. Used primarily for it’s incredible aroma, Idaho 7 also has high alpha acid, making it compatible with any hop forward beer.
Released in 2012, this hop paints a picture with its wide array of tropical and citrus aromas. It is one of our highest yielding hops and translates well into a variety of beer styles.
Nugget was developed in Oregon in 1983 and is characterized by a mild and pleasant herbal aroma and good storage stability. It is used by brewers both for bittering and for its aroma profile.
The newest addition to the farm, Sabro has a creamy coconut and fruity aroma that makes you crave a pina colada…in a hop kiln! Makes you wanna say “suhhhh bro”.
Released in 2000, this pungent and versatile cone gives off citrusy grapefruit notes with an earthy balance. Simcoe is one of the top ten varieties and is often used for bittering.
Released by Indie Hops and created in partnership with Oregon State University (and one of our farm managers during her undergrad studies as a breeding assistant). Strata is ripe with passionfruit, melon, strawberry, grapefruit, rock concert cannabis and dried chili peppers.
